Coconut Açaí Oatmeal Cookies

AN OLDIE BUT GOODIE! COMBINES THE ANTIOXIDANT OF THE AÇAÍ BERRY AND THE PROTEIN AND FIBER INCLUDED IN OATMEAL. THESE COOKIES ARE A FAR HEALTHIER ALTERNATIVE TO TRADITIONAL COOKIES YOU CAN BUY OR MAKE YOURSELF.

Ingredients

  • 1¼ CUP GLUTEN-FREE ROLLED OATS
  • ½ CUP ORGANIC AÇAÍ ROOTS JUICE
  • ½ CUP COCONUT CHIPS
  • 2 TBSP GLUTEN-FREE FLOUR
  • 2 TBSP BUCKWHEAT FLOUR
  • 2 TBSP COCONUT BUTTER
  • 2 TBSP UNSWEETENED SHREDDED COCONUT
  • 5 MEDJOOL DATES, PITTED
  • 1 BANANA
  • ¼ TSP POWDERED GINGER
  • ¼ TSP ORGANIC VANILLA EXTRACT

Directions

  1.  PREHEAT OVEN TO 350 F (CONVECTION IF POSSIBLE) AND LINE A LARGE BAKING SHEET.
  2.  MIX OATS, FLOUR, COCONUT CHIPS & SHREDS, AND FLOURS.
  3. SEPARATELY PROCESS/BLEND THE REST OF THE INGREDIENTS UNTIL SMOOTH.
  4. HOROUGHLY MIX BOTH TOGETHER.
  5. BAKE FOR 18-20 MIN (CONVECTION), FLIPPING HALFWAY THROUGH.
